Quiche with Gluten-Free Sweet Potato Crust

This easy gluten-free sweet potato quiche recipe is perfect for your hotel’s holiday menu with high-protein and full of veggies. The ingredients required for the recipe are quite simple and accessible. Quiche is part of French cuisine but is also popular in other countries including the United States, particularly as party food. It is a savory open flan consisting of pastry crust filled with eggs, milk or cream, and cheese, meat, seafood or vegetables. You can switch the ingredients according to your guest’s preferences.

Start by preheating oven to 375° and coat a large oven-safe skillet with nonstick spray. Now wrap the grated sweet potato in a kitchen towel and wring out moisture. Take a bowl and beat one egg. Add ground sweet potato and ¼ cup cheddar. Stir to combine. Press sweet potato mixture into skillet, making an even layer on the bottom and about two inches up the sides. Bake in the preheated oven for 25 minutes, until the sweet potatoes are cooked and just starting to crisp at the edges.

While the sweet potato mixture bakes, in a large bowl, beat together remaining eggs and cheddar. Stir in sour cream, scallions, and spinach. Season with salt and pepper. Pour egg mixture into sweet potato crust it the skillet.  Bake quiche for an additional 18 to 20 minutes, until eggs are set. You’re all done with your first-holiday recipe.

Tomato Soup in Grilled Cheese Bread Bowls

Christmas is about family and tradition and for most people that means the classics of Cheddar, Stilton and Brie. The classics are a good place to start. The next recipe is filled with extra cheese to give your guest the complete Christmas vibes.

Start by heating olive oil in a large pot and add diced onion for about 5 minutes. Add the garlic and cook 1-2 more minutes. Now add tomatoes, tomato paste, chicken stock, salt, and pepper. Stir. Turn the heat up a little and cook 15-20 minutes. With the help of a food processor or blender, blend the soup and add heavy cream and goat cheese. Reheat over the medium-low heat until you reach the desired temperature. Preheat the oven to 375°.

Using a small knife, cut the bread carefully.  Butter the inside of the bread and place the slices of cheese around the inside of the bread bowl. Bake 5-10 minutes in the preheated oven until cheese has melted.

Remove bread bowl from the oven, fill with the goat cheese tomato soup. Your delicious tomato soup in grilled cheese bread bowls is ready to serve.

Baked Chicken and Mushroom Risotto

Firstly, Preheat oven to 180C/160C fan-forced. Heat oil in a large flameproof, ovenproof dish over medium heat. Cook onion and bacon for 2 minutes stirring till softened then add in chicken and mushrooms and sauté until chicken turns brown.

Now add rice and stir for a minute. Add real stock to the rice. Stir well to combine. Bake for 15 minutes. Fold through zucchini and peas. Return to oven and bake, covered, for a further 25 minutes or until rice is just tender and liquid has almost all absorbed.

Lastly. Stir in parsley and parmesan. Season with pepper. Serve.

Lemon and Herb Roast Chicken

Roast chicken for Christmas dinner – why not, if it’s a special enough bird? When you think about it, the advantages are manifold. This dish is mouthwatering so before any further discussions, let’s start with the recipe.

Firstly, preheat oven to 425 degrees F. Now dry out the chicken thoroughly and season chicken cavity with salt and pepper, to taste. Place chicken in a roasting pan and drumsticks together with kitchen twine.

In a bowl combine butter, rosemary, thyme, parsley, garlic, and lemon zest. Season with salt and pepper, to taste. After mixing all the ingredients with butter, spread remaining half of the butter mixture over the chicken and season with salt and pepper, to taste.

Place into oven and roast until the chicken is golden brown and completely cooked through, Serve immediately.

Roasted Beef Tenderloin

Excellently cooked, medium-rare whole beef tenderloin is a wonderful sight to observe, and it makes a seriously majestic presentation for a crowd.

Before jumping straight to the recipe let us know what actually a beef tenderloin is?  Basically, it’s known as an eye fillet in Australasia, filet in France, and fillet in the United Kingdom and South Africa, cut from the loin of beef.

Combine porcini mushrooms and water in a bowl; soak until soft, dice and set mushrooms. Preheat oven to 325 degrees F. Season beef generously with salt and pepper. Heat vegetable oil in a large ovenproof skillet over high heat. Place beef in the skillet; cook until brown on all sides, 5 to 8 minutes per side.

Reduce heat to medium and stir in 1 tablespoon butter, shallots, and a pinch of salt; cook until shallots are soft and translucent, 5 to 7 minutes. Pour vinegar into the skillet and bring to a boil. Stir until liquid is reduced by half.

Pour in veal stock, cream, 1/2 cup reserved mushroom liquid, mushrooms, salt, and pepper; stir to combine. Return beef to the skillet. Roast in the preheated oven until meat is medium rare, about 45 minutes. Transfer meat to a plate and loosely tent with foil. Set skillet over high heat and bring pan juices to a boil.

Stir in 1 tablespoon butter and tarragon; season with salt and pepper to taste. Return tenderloin and any accumulated juices to skillet and serve.
